What is it?

Sushi ginger or "Gari" is young ginger. They are cut into wafer-thin slices and inlaid into vinegar, sugar and salt. The younger the ginger, the more pink it will color. The older the ginger, the more yellow it becomes. In addition to soy sauce and wasabi, sushi ginger is indispensable when serving sushi. Not only is it tasty, but it neutralises the taste buds, so that the taste of the sushi is not influenced by the previous aftertaste.

How to use?

Sushi ginger is usually served as pickles with sushi and sashimi. Eat it between the snacks to neutralize the taste buds.
