Wheat noodles or somen are very thin noodles, made from wheat flour and salt. Traditionally sums are made by stretching the dough with the aid of vegetable oil to make very thin strips and then air-dried. In Asia somen is served in countless variations.
You can prepare these versatile wheat noodles as noodle soup or as a cold noodle dish. Bring the somen to boiling for 3-5 minutes in boiling water and, if necessary, rinse with cold water. Then it is ready for further preparation.
