Wereldwijd staat Korea bekend om zijn pittige, gezonde en smaakvolle gerechten. Eén van de bekendste nationale gerechten is de kimchi (gefermenteerde, pittige kool), waarvan wordt gezegd dat deze in de top 5 staat van ’s werelds gezondste gerechten.
Kimchi is fermented spicy Chinese cabbage. The cabbage is inlaid with salt (water) and chili pepper. For the extra flavor, spring onion, garlic and ginger are added. Traditionally, raw oysters are added to speed up the fermentation process. Kimchi is a popular side dish and seasoning in Korean cuisine.
This versatile Kimchi can be used as a seasoning in for example soups, stews and rice dishes. It is also processed in pancakes, dumplings (mandu) and rice cakes. As a side dish it is indispensable.
