Fish sauce is made from (ansjo) fish, salt and sugar. The moisture of anchovies or other fish is extracted from the fish by means of months of salt and fermentation in the sun. And that's why the fish sauce tastes so strong about fish.
Fish sauce is mainly used in Southeast Asia, such as Thailand, Vietnam, Laos, Cambodia and the Philippines. Fish sauce is considered as a soy sauce in South East Asian cuisine. It is used everywhere, in cold and hot dishes. Thai and Vietnamese dishes can not do without. Fish sauce can be stored outside the refrigerator after opening.
