Mut Gung: Vietnamese-Style Candied Ginger

Ginger has undeniable virtues for health: this is why it is very popular in Vietnam, but also in the rest of the world! Mứt gừng, or candied ginger, is often eaten as a snack with tea and is particularly consumed during the Vietnamese New Year (Tet).



INGREDIENTS

  • 300g ginger
  • 300g caster sugar

Tools:

  • Clean cloth
  • Baking paper

PREPARATION


Cooking the ginger


Soak the ginger in water for 5 hours. Peel and mince it before rinsing it 2 or 3 times. Change the water, then bring it to a boil. Let the ginger cook for 20 minutes. Once the ginger is cooked, rinse and drain it. Finally, spread it out on a clean cloth. Let it dry overnight.



Making of the confectioneries


Put the ginger in a saucepan, then add a teaspoon of water and the sugar. Let it simmer over low heat until the liquid has evaporated (it would take about 5 minutes).



Letting the candied ginger rest


Carefully drain the ginger, making sure to coat each strip with the melted sugar. Then spread them out on a sheet of baking paper before sprinkling them with caster sugar. Let them dry for 24 hours at room temperature.
