Quick cooking rice or parboiled rice is pre-cooked and then dried again. The vitamins and minerals from the pericarp are (partially) transferred to the grain of rice. Only then is the grain sharpened so that the nutrients are retained. The structure of the parboiled rice is dry and granular. Parboiled rice is often used in Indian and Pakistani cuisines.
Parboiled rice is pre-cooked or pre-steamed, so this kind of rice needs less cooking time than white rice. Parboiled rice is eaten as a big part of the meal: for example, delicious with Indian dishes such as dahl, kedgeree or chicken tikka masala.
