Bean sauce, also known as taotjo, is made from fermented soybeans. Cooked soybeans are mixed with water, salt and a little wheat flour to ferment in pots in the sun. The taste is nice and salty. Sometimes the sauce is ground with pieces or whole soybeans or sometimes very finely.
Bean sauce is used as seasoning: as a marinade, but also for stir-fries. Due to the intense taste of the soybeans it is advisable not to add too much of it in the dish.
