Fish sauce is made by fermented (anjo) fish. They are first inlaid in salt, packed together and sealed in barrels for several months. By the action of the salt the whole fish liquefies. The moisture that is released from this is made into a fish sauce. The longer fermented the more fuller and tastier flavor. Fish sauce is used in many South East Asian countries: Thailand and Vietnam.
Fish sauce is mainly used in Southeast Asia, such as Thailand, Vietnam, Laos, Cambodia and the Philippines. Fish sauce is an important seasoning in South East Asian cuisine. By adding fish sauce, the dish gets extra flavor depth. Fish sauce can be used in sauces, dips, curry dishes and stir-fry dishes. Fish sauce can be stored outside the refrigerator after opening.
