Coconut Ice Cream with Boba Pearls and Brown Sugar Syrup

It’s hot isn’t it? Indulge yourself with this delicious and refreshing dessert!


  • 1 pack coconut ice cream

Tapioca pearls:

  • 3 liter water
  • 250g tapioca pearls (boba)

Brown sugar syrup:

  • 100g dark brown sugar
  • 300 ml water


Tapioca pearls
Bring 3 liters of water to a boil. Add the tapioca pearls, bring it to a boil again, and cover the pan with the lid. Boil the pearls for about 30 minutes over medium-high heat, stir from time to time. Turn off the heat and let it rest for 30 minutes with the lid on the pan.

Then add 500 ml of water and bring it to a boil again. Let it boil for about 30 minutes over medium-high heat. Turn off the heat after 30 minutes, then let the pearls rest in the warm water for another 30 minutes, with the lid on the pan.

Drain the water and rinse the pearls with cold water.

Brown sugar syrup
Bring 300 ml of water to a boil in a saucepan. Lower the heat and add sugar to the warm water, dissolve the sugar by stirring. Let the water evaporate until you get a light syrup, then add the pearls and mix it well. Take the pan off the stove and let it cool down.

Scoop up ice cream and put it in a bowl, then add the tapioca pearls. Finally, spray whipped cream on top of the ice cream.
