Maroyaka Sanmi is a mild unsweetened rice vinegar made from rice, alcohol and water. The color of the rice vinegar depends on whether polished or unpolished rice is used or perhaps on the additives.
Maroyaka Sanmi no kome su rice vinegar is used as a seasoning for sushi rice. In order to preserve the taste of the vinegar optimally, it is advisable to let the sushi rice cool down first. Maroyaka can not be mixed with sugar for a better taste.
