Crispy Prawns With Stir-Fried Grains

  • 12 unpeeled shrimps 16/20
  • ¼ tsp salt
  • ¼ tsp white pepper
  • 1 Tbsp fish sauce
  • 1 small egg
  • 90g potato starch
  • 210g ready-made grains
  • 50g butter
  • 30 Thai basil leaves
  • 3 garlic cloves
  • 2 red chili peppers
  • ¼ tsp salt
  • Frying oil
  • 1 lime (garnish)



Bring the butter to room temperature. Chop the garlic and slice the red chili peppers into fine bits. Beat the egg. Remove the shrimp legs and feelers, but leave the shell and the head on. Make a shallow slit down the middle of the back and remove the black vein. Dry the shrimps with a paper towel.

Heat oil in a frying pan at 175℃. Put the shrimps in a bowl. Add the fish sauce, salt, white pepper and the egg. Mix all well. Then add the potato starch and mix well again. Fry the shrimps in 3 to 4 minutes until done.

Melt the butter on low heat in a pan. Add the basil leaves and stir-fry until crispy. Then add the garlic and peppers, and stir-fry until the aromas are released. Add the ready-made grains, and stir-fry until golden-brown. Lastly, add the shrimps and mix all well.
