Macro Bowl With Tofu And Soy Dressing

Easy, nutritious and yummy: that’s the macro bowl! A balanced meal containing the macro nutrients carbohydrates, protein and fats. Big plus: you can mix and match with your favorite ingredients.



INGREDIENTS

  • (Brown) rice
  • Olive oil
  • Salt and pepper
  • Sesame seeds

Toppings:

  • Cooked edamame beans
  • Firm tofu
  • Avocado
  • Kale

Dressing:

  • 1 Tbsp ginger syrup
  • 1 Tbsp rice vinegar
  • 2 tsp sesame oil
  • 1 Tbsp soy sauce
  • 3 Tbsp sunflower oil
  • 10g chopped fresh coriander

HOW TO MAKE IT


Prepare the rice according to the instructions on the package. In the meantime, cut the avocado into slices. Mix the ingredients for the dressing in a bowl.



Wash the kale, drain and chop it. Put it in a large bowl. Sprinkle with a bit of olive oil, salt and pepper. Massage the kale for 1 minute or until it’s soft.



Wrap the tofu in multiple layers of paper towels. Press the tofu carefully to absorb the moisture. Cut the tofu into slices of 10 mm thick. Heat oil in a pan. Add the tofu and fry them on each side for 6 minutes until golden brown. Then cut it into cubes.



Put the rice in a bowl. Add the toppings and sprinkle with the dressing and sesame seeds.
