These sweet potato fries covered with creamy salted egg yolks are perfect as a snack or as an appetizer!
- 300g sweet potatoes
- 4 salted egg yolks
- 1 Tbsp vegetable oil
- Chopped green onion (to taste)
- Corn starch (optional)
Steam the salted egg yolks for 10 minutes, until they are cooked. Let them cool, then finely crush them.
Peel the sweet potatoes and cut them into sticks. Boil some water in a deep pan and cook the sweet potato sticks until they are slightly soft. Be careful: do not fully cook them as they are going to be fried later.
Heat the vegetable oil in the pan and stir-fry the crushed salted egg yolks until some air bubbles appear on their surface. Add in the sweet potatoes and stir-fry them while mixing well so that they are evenly coated by the salted egg yolks.
Sprinkle some chopped green onion on the sweet potatoes, and serve them.
If you want your fried sweet potatoes to be extra crispy, you can coat them with corn starch after they had been steamed. Then, fry them before adding them to the salted egg yolks.
