It’s like a mix between ice cream and sorbet, with the fluffy texture of snow. Who wouldn’t want that on a scalding summer day? Although this dish is well-known at Japanese festivals, it is also lovely to have during your relaxing time in the backyard. Kakigori is a classic yet contemporary dessert in Japan, let’s discover why! With the following 5 recipes, you can transform every summer day into a party ;)
This variety with watermelon is fresh and juicy – perfect as a thirst quencher! Cut the watermelon into cubes and freeze them, preferably overnight. Place the watermelon cubes in a sturdy blender and mix with two tablespoons of honey and a few mint leaves, until the mixture has a texture similar to snow. Add watermelon cubes until you have the right amount of shaved ice. Serve in your prettiest bowl. Garnish with a few mint leaves.
How about an authentic and creamy variety straight from Japan? Try kakigori with matcha! Place 300g ice cubes in the blender (if necessary in batches) and mix until the texture is similar to snow. Mix two tablespoons of matcha powder with 100 ml of condensed milk in a bowl using the tablespoon, until the mixture becomes smooth and uniformly green. Pour the mixture over the shaved ice and stir until the mixture is equally spread over the ice. Serve in your prettiest bowl. Garnish with some sweetened azuki beans and a scoop of matcha ice cream to your preference.
3. Pineapple & coconut
Have you been dreaming about the ideal beach holiday on a tropical island? With this heavenly kakigori it will be as if you are already there! Cut the pineapple slices in triangles and freeze, preferably overnight. Place the pineapple triangles in the blender and add 20 ml of coconut milk. Mix until it has a texture similar to snow. Serve in your prettiest bowl. Add some condensed milk over the top of the shaved ice up to your preference. This tropical variety is delightful on a warm summer day!
Place the preferred amount of ice cubes in the blender and mix until it has a texture similar to snow. Then slowly add some orgeade (Surinamese almond syrup) while stirring up to your preference to adjust the sweetness. Serve in your prettiest bowl. Add some condensed milk over the top of the shaved ice up to your preference. Garnish with assorted fruit to your preference.
Place the preferred amount of ice cubes in the blender and mix until it has a texture similar to snow. Pour some melon milk over the shaved ice, up to the sweetness of your preference. Stir until the shaved ice and the melon milk are one smooth mixture. Serve in your prettiest bowl. Add some condensed milk over the top of the shaved ice up to your own preference. Garnish with tropical fruit or halo halo assorted fruit. Variation tip: use melon syrup instead of melon milk.
