Asian-Style Chickpea Salad with Hoisin Dressing

This chickpea salad served with Hoisin dressing is not only delicious and healthy, but also gluten-free and vegan!


  • 880g canned chickpeas
  • 1 medium-sized cucumber
  • 1 red pepper
  • 150g corn


  • 3 Tbsp hoisin sauce
  • 2 Tbsp soy sauce with less salt
  • ½ tsp chilli garlic sauce


Drain and rinse the canned chickpeas. Remove the seeds from the red pepper. Chop it as well as the cucumber. Combine the ingredients for the dressing and set it aside. Mix the remaining ingredients in a large serving bowl. Drizzle the chickpea salad with dressing and gently toss to combine. Serve.
