Coconut Cream Pudding with Strawberry Jelly

Surprise your Valentine with this delicious coconut cream pudding and strawberry jelly!

Strawberry jelly:

  • 2 packs of strawberry jelly powder
  • 900ml boiling water
  • 12-14 Tbsp sugar
  • 3 Tbsp gelatin powder

Coconut cream pudding:

  • 1 Tbsp gelatin powder
  • 200ml warm water
  • 60g rock sugar
  • 400ml coconut milk
  • 100ml condensed milk


Strawberry jelly

Mix the strawberry jelly powder, gelatin powder and sugar in a bowl. Then add 900 ml of boiling water, and stir until everything has dissolved. Pour the jelly mix in a rectangular plate and let it firm up in the fridge for 2 hours.

Once the jelly has stiffened up, press a heart-shaped mold on the jelly. Wiggle it carefully. Then remove the superfluous jelly. Divide the heart-shaped jelly over the plate and leave some space in between of 1 centimeter.

Coconut cream pudding

Stir the rock sugar and 100 ml water in a pan on low heat until the sugar has dissolved. Then add the condensed milk and the coconut milk. Mix the gelatin powder and 100 ml water in a small bowl. Stir until the gelatin powder has dissolved.

Take the pan off the stove and add the dissolved gelatin. Stir until everything is blended well. Let it cool off for 15 to 20 minutes. Then pour the coconut cream in the plate with the heart-shaped jelly, up to the edge of the hearts – leave the upside free. Put the plate back in the fridge to let it stiffen up further.
