韩国饭馔(韩国特色腌制小菜)

Banchan is a Korean side dish, of which kimchi might be the well-known one. There are many kinds of banchan: the following are a selection of these Korean side dishes.





Korean cucumber salad ''Oi Muchim'' (오이무침)



Ingredients

  • 2 cucumbers (sliced)*
  • 2 tsp coarse sea salt*
  • 1,5 Tbsp Korean red pepper powder*
  • 1 tsp rice vinegar*
  • 1 tsp roasted sesame seeds*
  • 1 garlic clove (chopped)*
  • 1 tsp sesame oil*
  • 1 Tbsp sugar*

For extra spiciness: add 1 Tbsp gochujang*

Preparation
Sprinkle the slices of cucumber with two teaspoons of salt, mix and place aside for 20 to 30 minutes. Dry the cucumbers with a paper towel. Mix the red pepper flakes, rice vinegar, sesame seeds, garlic, sesame oil and sugar into a bowl, and then add the cucumbers. Place the mixture in the refrigerator and let cool off before serving. 





Korean rettich salad ''Musaengchae'' (무생채)



Ingredients

  • 500g rettich (sliced)*
  • 2-3 Tbsp Korean red pepper powder*
  • 1 tsp coarse sea salt*
  • 2 spring onions (in rings)*
  • 2-3 tsp minced garlic*
  • 1,5 tsp fish sauce*
  • 1 tsp roasted sesame seeds*
  • 0,5 tsp sugar (for seasoning)*

Preparation
Wash and peel the rettich. First cut into slices of 2 cm and then into cubes. Sprinkle the rettich with 1 teaspoon of coarse sea salt, mix and place aside for 20 to 30 minutes. Squeeze the moisture from the rettich. Add the rest of the ingredients and mix together. Place in the refrigerator to cool off before serving. 





Korean bean sprout salad ''Sukju namul muchim'' (숙주나물 무침)

Ingredients

  • 350g bean sprouts*
  • 1 tsp coarse sea salt*
  • 1 spring onion (minced)*
  • 1 tsp garlic (minced)*
  • 1 tsp roasted sesame seeds*
  • 1 Tbsp sesame oil*
  • 0,5 tsp coarse sea salt (for seasoning)*

Preparation
Fill a pot with water and boil it with 1 tablespoon of coarse sea salt. As soon as the water starts boiling, add the bean sprouts, and blanch for 1 to 2 minutes until done. Then, place the bean sprouts in a bowl of ice-cold water to keep the bite. Drain the bean sprouts properly. Place the bean sprouts in a bowl and mix the garlic, spring onion, roasted sesame seeds and sesame oil together.





Koreans spinach salad ''Sigeumchi Namul'' (시금치나물)



Ingredients

  • 500g po choi (Chinese spinach)*
  • 2 cloves of garlic (minced)*
  • 1 tsp coarse sea salt*
  • 1,5 Tbsp soy sauce*
  • 1,5 Tbsp sesame oil*
  • 1,5 Tbsp sesame seeds*

Preparation
Fill a pot with water and boil with 1 tablespoon of coarse sea salt. As soon as the water starts boiling, add the po cho, and blanch it for 1 to 2 minutes until it is ready. Rinse with cold water and squeeze out the moisture. Cut these into pieces of 5 cm long and place them aside for later use. Mix the garlic, the spring onions, the soy sauce and the sesame oil in a bowl. Add the chopped clove of garlic to the po choi and mix everything together. For the finishing touch, sprinkle the vegetables with the roasted sesame seeds.
