抹茶巴伐利亚蛋糕 / Matcha Bavarois Cake

Ingredients


Crumbled bottom
- 160g Oreo cookies 
- 100g butter
- 210g Japanese azuki beans

Bavarois
- 500 ml milk
- 1 Tbsp pure matcha powder
- 5 egg yolks
- 2 Tbsp + 2/3 cup fine crystal sugar
- 8-10 gelatine leaves
- 300 ml whipped cream
- 5 egg whites

Kitchen tools
- 1 baking mold Ø 18 cm
 


Directions


Crumbled bottom
1. Remove the filling of the oreo cookies. Put the oreo cookies inside a ziplock bag and crumble it with a rolling pin. 

2. Melt the butter in a pan and add this to the oreo cookies. Mix it with the crumbs untill it becomes fatty. Is it still too dry, add some melted butter. For a sweeter crumbly bottom, keep the filling in the oreo cookies and crumble it with a rolling pin. 

3. Cover de bottom of the baking mold with de crumbled oreo cookies. Use your fingers to press the cookies firmly. Pour the azuki beans on the crumbled bottom and use the flat side of the spoon to cover the whole bottom with azuki beans. 

Bavarois
4. Soak the gelatine leaves in water for 10 minutes. Heat up the milk (don't let it cook) and pour 1 tablespoon of matcha powder. Turn down the heat to medium and stir it well untill the matcha powder is dissolved. Break the egg yolks and add 2 tablespoons of sugar. Pour 1 tablespoon of hot milk, turn it around and put the mixture back in the pan. 

5. Keep stirring the bavarois and let it cook for 1 minute. Remove the pan from the stove and add the squeezed gelatine, stir it well untill it is dissolved. Let the mixture cool down. 

6. Whip the whipped cream. Mix the whipped cream in a mixer untill it has a yogurt substance. This needs to glide away from a whisk. Mix the whipped cream through the egg mixture. 

Whip the egg whites
7. Whip the egg whites and add at the same time 100 gram of sugar. The egg white is stiff when the egg white doesn't get out of the bowl. Mix the egg whites with the rest of the mixture. 

8. Pour the mixture in the baking mold and firm it up in the refrigerator for 1 to 2 hours. Sprenkle the matcha powder on top of the bavarois.
