Barley and Candied Winter Melon Drink
This Malaysian barley and candied winter melon drink can be enjoyed warm or chilled, which makes it perfect for both hot summer and cold winter days!
- 100g pearled barley or hulled barley
- 120g candied winter melon
- 2l water
- 2 pandan leaves (rinsed, knotted)
- Sugar (to taste)
- Rinse and soak the barley for 30 minutes. Drain the water.
- Place the barley, candied winter melon and pandan leaves in a large pot filled with 2 litres of water.
- Bring the ingredients to a boil, reduce heat, and let the drink simmer for an hour.
- Remove the pot from the heat and allow the drink to cool. Serve it warm or chilled.
The candied winter melon itself is sufficiently sweet. Please, add a little sugar if you prefer a sweeter drink.
