The Surinamese cultural diversity is reflected in its cuisine, which is greatly influenced by Asian, African and European cuisines. Try this Surinamese dish inspired by the famous Chinese crispy pork belly!
INGREDIENTS
- 4 Tbsp Lufo Chinese Marinade
- 1 kg pork belly
- 3 Tbsp rice wine
- 1 lemon
- 2 Tbsp salt

PREPARATION
Wash the pork belly with lemon. Cut notches on the bottom of the pork belly. Make notches of about 3 mm deep in the rind. Pierce the rind using with a special meat tenderizer. Marinate the bottom and inside of the meat with 4 tablespoons of Lufo Chinese marinade. The marinade is very concentrated and all the spices are already in it. So you don't need much of it, otherwise the taste will be too strong. Wrap the rind in tin foil. Coat the top with rice wine and sprinkle with salt. Leave it in the fridge and bake it in the oven the next day.
Preheat the oven to 210 ° C and set the oven to the grill/roast mode. Place the pork on an oven rack. Do not forget to place a baking tray under the rack to collect any fat and sauce, to prevent a dirty oven. First roast the marinated meat in the oven for 30 minutes on one side, then for 30 minutes on the other side. Remove the meat from the oven and slice the tender seasoned meat.

The pork tastes delicious on freshly cooked rice, Chinese fried rice, fried noodles and/or steamed asparagus beans.
