Try this roasted duck in some creamy, spicy and slightly sweet Thai red curry! It is delicious and easy to make thanks to Suree’s paste.
INGREDIENTS
- 50g Suree Thai Red Curry Paste
- 400ml coconut milk
- 250g roasted duck breast (bite-sized)
- 400g egg plants
- 20g garden peas
- 10g red chilli
- 10 sweet basil leaves
- 1½ Tbsp fish sauce
- Jasmine rice (cooked)
- Salt and sugar
- 2 Tbsp vegetable oil
PREPARATION
- 1. Heat the oil in a pan and add the curry paste.
- 2. Add the duck breasts and stir-fry it well.
- 3. Add the egg plants, garden pea and coconut milk.
- 4. Season with fish sauce, salt and sugar.
- 5. Garnish with basil leaves and red chilli peppers.
- 6. Serve with jasmine rice.
