Vegetarian Chicken Curry

  • 1 pack chicken curry paste (Happy)
  • 1 pack vegetarian chicken (Happy)
  • 10 boiled potatoes
  • 60g green beans
  • ½ carrot
  • 1 onion
  • 1 garlic clove
  • 250 ml coconut milk
  • 250-300 ml water
  • 4-5 basil leaves
  • Oil

Serve with:

  • Rice
  • Roti wraps

  1. Heat oil in a pan. Add the onion and stir until aromatic. Add the potatoes and carrot, and stir-fry for about 5 minutes.
  2. Add the garlic, then add the water. Boil the water for about 15 minutes over medium high heat.
  3. Add the vegetarian chicken, followed by the coconut milk. Then add the green beans with the paste. Stir well. Bring it to a boil again.
  4. Serve with rice and/or roti wraps.
