INGREDIENTS
- 100g rice
- 1 Chinese dried sausage
- 250g chicken
- 5 Chinese dried mushrooms
- 4 ginger slices
- Choy sum
- Earthen pot
Marinade:
- 1 tsp light soy sauce
- 1 tsp dark soy sauce
- 2 tsp oyster sauce
- ½ tsp sugar
- 2 garlic cloves
- 3 ginger slices
- 1 tsp corn starch
Spice mix:
- 1 tsp dark soy sauce
- 1 tsp sesame oil
Garnish:
- 1 spring onion
- 2 tsp fried onions
PREPARATION
Slice the chicken into pieces and season with the marinade for 30 minutes.
Put the rice in an earthen pot and cook it over low heat for 15 minutes until half done. Then put the chicken, sausage, mushrooms and ginger on top of the rice. Cover the pot with the lid and simmer for 20 minutes or until the chicken is done.
Pour the spice mix on top and add the choy sum. Simmer for another 2 minutes.
Garnish with the spring onions and fried onions.
