Croquettes are fried foods that are deliciously soft on the inside and crispy on the outside. The best part about it? They can be enjoyed at any time of the day, as a snack or as a dish during a meal! These Surinamese croquettes with salted cod are perfect for those who love fish and strong flavors.
INGREDIENTS
- 400g frozen cassava, in cubes
Salted cod:
- 450g Faja Lobi Bakkeljauw Filet
- Faja Lobi Zonnebloemolie Trafasie
- 2 onions, finely chopped
- 4 garlic cloves, finely pressed
- 2 Tbsp Faja Lobi Bakkeljauw Trafasie
- 1 tsp Faja Lobi Piment (ground allspice)
- 4 branches of fresh celery
- Optional: Madame Jeanette pepper
Croquettes:
- 4 eggs, beaten
- 300g breadcrumbs
PREPARATION
CASSAVA
STEP 1: Cook the cassava in water with a pinch of salt for about 10-15 minutes until al dente. Drain it.
STEP 2: Mash the cooked cassava.
SALTED COD
STEP 3: Chop the salted cod into small pieces and cook for 20 minutes in water to desalt it.
STEP 4: Rinse with cold water in a colander. Drain by firmly squeezing the cod.
STEP 5: Heat 5 tablespoons of sunflower oil, fry the onion and the garlic until lightly browned.
STEP 6: Add the cod, stir and fry for about 5 minutes until golden.
STEP 7: Add Bakkeljauw Trafasie, piment, celery and Madame Jeanette pepper, and heat while stirring for 5 minutes.
CROQUETTES
STEP 8: Add the cod to the mashed cassava and stir until evenly mixed.
STEP 9: Shape into croquettes, and roll through the beaten eggs. Then roll through the bread crumbs.
STEP 10: Fry until golden.
Serving suggestion
Serve with tomato ketchup or chili sauce.
Variation tip
You can replace the cassava with potatoes.
