A stir-fried rice noodle dish with assorted veggies and shrimps. A favorite dish in any Pinoy celebration!
INGREDIENTS
- 40g Mama Sita’s Pansit Bihon Mix
- ¼ tsp Mama Sita’s Anchuete
- 227g rice noodles
- 250g shrimps, peeled and deveined
- 1½ garlic, crushed
- 1 red onion
- 100g green beans
- 100g carrot
- 1½ Tbsp celery
- 100g cabbage
- 2 Tbsp oil
Garnish:
- Fried garlic
- Scrambled egg
Serve with:
- Fish sauce (patis)
- Calamansi (Filipino lime)
PREPARATION
Thinly slice the green beans and celery. Slice the red onion and carrot. Cut the cabbage and scrambled egg into strips.
Heat oil in a pan and sauté the garlic and onions. When the onions have wilted, add the shrimps and the vegetables. When the shrimps turn pink, add the achuete powder and dissolved bihon mix. Cover and cook for another three minutes. Add the noodles. Mix well, and continue cooking over medium heat. When the noodles are tender, remove from heat.
Garnish with fried garlic and slices of scrambled egg. Serve with fish sauce and Filipino lime.
