Putting an egg in cafe? What? Yes, it is possible, and it is delicious! Cà phê trứng, or egg coffee, is a hot, creamy beverage served in many cafes in Hanoi, the Vietnamese capital where it originates from. Try it!
INGREDIENTS
- 4 tsp Trung Nguyen coffee
- 2 tsp condensed milk (or to taste)
- Boiled water
- 1 egg
Tools:
- Vietnamese coffee filter (phin)
- Electric kettle
- 2 big transparent cups
- Bowl
PREPARATION
Preliminary
Boil some water in an electric kettle. Clean the filter and preheat the cup by pouring boiling water into it. Empty the cup and dry the filter. Place the coffee filter on top of the cup. Remove the lid and the metal inner filter from the coffee filter and scoop in the Trung Nguyen coffee. Put the inner filter back on top of the coffee.
Pour a tiny bit of water through the filter just to moisten the ground coffee. Let it expand a bit. This will allow you to get rid of the few small grinds going through the filter. Throw them away.
Coffee making
Fill the filter completely with hot water, put the lid on top of it and let the coffee drip. The ideal brewing time is around 3 to 5 minutes.
Crack an egg and collect the yolk. Put the egg yolk and condensed milk in a small, deep bowl and whisk vigorously until you get a frothy mixture. Add a tablespoon of brewed coffee and whisk the mixture again. Pour your brewed coffee into a new, clean cup, then add the fluffy egg mixture on top.
