This creamy mango and coconut pudding is super easy and quick to make! It is perfect as a refreshing snack or dessert in summer.

INGREDIENTS

  • 400g fresh mango, mashed
  • 100 ml cream, unwhipped
  • 200 ml coconut milk
  • 200 ml whole milk
  • 20g gelatin powder
  • 60g sugar
  • 80 ml water

PREPARATION


Mix the sugar and the gelatin powder in a bowl. Bring water to a boil, together with the sugar mix. Keep stirring until the sugar and gelatin powder has dissolved. Add the coconut milk, whole milk, cream and mashed mango, and stir well. Let it boil for about 3 minutes over low heat.



Pour the mango coconut mixture into a glass plate, and put it in the fridge to let it firm up. Then slice the mango coconut pudding into cubes.
