Ingredients
- 2 chicken thighs
- 3 stems of spring onion
- 10g ginger (finely chopped)
- 3 chilli peppers
- 2 cups of oil
Sauce
- ¼ tsp of salt
- ¼ tsp of Sichuan peppercorn
- 1 tbsp of vinegar
- 1 tsp of sesame oil
- 1 cup of water
- potato starch
Preparation
Step 1
Mix potato starch and water. Then mix the other ingredients for the sauce in another bowl.
Step 2
Wash the spring onion, then cut into strips. Chop ginger and chillies finely then set aside. Slice the chicken thighs into strips.
Step 3
Heat a wok on medium setting, add two cups of oil and stir fry the chicken until medium done. Place aside.
Step 4
Stir fry spring onion, ginger and chilli peppers with the remaining oil. Lower the heat and add the chicken and the sauce. Once the sauce dries a bit, add potato starch and water. Before serving, garnish with sesame oil for a fragrant aroma.
