These satay skewers are made from chicken thighs, which makes them tender and juicy. Aside from the regular satay sauce, we recommend using kecap sauce as a condiment.

300g chicken thighs
Marinade
2 tbsp kecap manis
1 tbsp kecap asin
1 tsp cumin powder
1 tbsp fresh ginger
2 cloves of garlic
1 lemon
1 shallot
1 tsp brown sugar
Condiment
120 ml kecap manis
1 tbsp sambal oelek
½ tsp sesame oil
1 shallot
1 lime
2 tsp brown sugar
3 cloves of garlic

Preparation
Step 1: Put the bamboo skewers in a bowl of water. This is to make sure that the skewers will not burn later on.
Step 2: Rinse the chicken and properly pat dry. Cut the chicken in equal cubes.
Step 3: Cut the garlic and chop the shallot. Cut the lemon in slices. Grate the ginger. Put all the ingredients for the marinade in a bowl.
Step 4: Add the chicken to the marinade and let sit in the fridge for approximately 3 hours or overnight.
Step 5: Put the pieces of chicken on the bamboo skewers one by one.
Step 6: Roast the chicken for 10 minutes and flip sides halfway.
Step 7: Prepare the Kecap sauce:
Chop the shallots and the garlic. Heat one tbsp of oil in a sauce pan. Stir fry shortly. Add sambal and sugar. Mix properly. Take the pan of the heatsource and add kecap manis and lime juice. Stir once more, properly. Add a little sesame oil for extra taste.
