Jeonbok-juk is a Korean porridge made with abalone and white rice. Abalone is regarded as a high quality ingredient in Korean cuisine and was often presented as a gift to the king of Korea. Prepare this porridge yourself and dine like a king!
INGREDIENTS
- 2 medium-sized abalones
- 200g rice
- 1.2-1.4 liters water
- 40g chopped carrot
- 2-3 scallions
- 1 tsp fish sauce
- 1 tsp salt
- 2 tsp sesame oil
- 2 garlic cloves
Garnish:
- 1 seaweed sheet
- Eggs (optional)
- Sesame seeds
PREPARATION
Rinse and soak the rice in cold water for an hour. Then, strain it.
Chop the abalones and the scallions, and mince the garlic cloves. Heat a thick-bottomed pot at medium high temperature. Add the sesame oil and minced garlic cloves. Stir for about 20 seconds. Add the rice and stir for another minute.
Add the chopped abalone along with the water. Cook the porridge over medium-high heat for 10 minutes. Add the chopped carrot and green onions into the pot and cook for another ten minutes over low heat. Add the fish sauce and salt, then stir the porridge. Turn off the heat.
Divide the jeonbok-juk over four bowls. Cut the seaweed into strips and use them for garnish. You can also add a raw egg if you like. Sprinkle with sesame seeds.
