A tasty beef stew cooked in a savory adobo marinade, with carrots, potatoes, and lots of shallots.
INGREDIENTS
- 50g Mama Sita’s Adobo Mix
- ½ tsp Mama Sita’s Achuete Powder
- 1 kg beef spareribs
- 200g potatoes, fried
- 1 kg shallots
- 2 Tbsp fish sauce (patis)
- 120 ml oil
- 1 liter water
- Salt to taste
PREPARATION
Dissolve the adobo mix in 250 ml water. Cube the potatoes and chop the shallots finely.
Slice the spareribs crosswise. Marinate it in the dissolved adobo mix for at least 4 hours.
In a pan, heat 60 ml oil and pan-fry the spareribs until brown. Add 1 liter of water. Let it boil and simmer until the meat becomes tender.
In a pan, heat 60 ml oil and sauté shallots. Add the fish sauce, the achuete powder, the remaining marinade and salt to the spareribs. Cover and simmer. Reduce heat. Stir once in a while.
Add the potatoes when the meat is tender.
Arrange on a platter and pour the sauce over the spareribs.
