Leche flan is a Filipino dessert, made of egg yolks, condensed milk and topped off with a sauce of caramel.

10 medium-sized eggs
397ml condensed milk
250ml whole milk
1 tsp vanilla extract
Caramel sauce
200g sugar
90ml water

Preparation
Step 1
Add sugar and water to a sauce pan. Heat the sugar on medium heat. It is not necessary to stir. Stay with the sauce pan until the sugar slowly starts to melt. Let boil until the color is golden brown. Take the sauce pan of the heat and equally distribute the caramel sugar over the mini-bowls.
Step 2
Break the eggs and separate the yolks from the egg white. Place the yolks in a large bowl and mix on the lowest setting until it becomes fluffy. Add condensed milk slowly, while mixing. Mix until properly dissolved. Add the whole milk and keep mixing. Add the vanilla extract. Stir properly a few times.
Step 3
Sift the egg mixture 5-6 times through a strainer. Option 1: Equally divide the mixture over 6 mini-bowls and cover with aluminium foil. Steam for 30 minutes in a steaming pan.
Option 2: Pre-heat the oven on 180°C.
Pour a layer of water in a deep dish which fits all 6 mini-bowls. Place the deep dish in the middle of the oven and bake for 25-30 minutes.
Step 4
Let cool off for 10 minutes within the mini-bowls. Use a knife to separate the leche flans from the sides and flip over. Place in the fridge for 3 hours.
