Learn how to cook butternut squashes differently by doing it the Asian way! This spicy and gourmet dish is perfect with steamed white rice.
INGREDIENTS
- 1 red curry paste
- 700ml coconut mik
- 200g beef, sliced
- 2 Tbsp fish sauce
- ½ tsp sugar
- ½ tsp paprika powder
- 8 kaffir lime leaves
- 1 butternut, in cubes
- Oil
PREPARATION
- 1. Heat the oil in a wok. Add the curry paste and stir until the aromas are released.
- 2. Add the beef and stir-fry the meat. Take out the meat.
- 3. Add the coconut milk, fish sauce, sugar, paprika powder and lime leaves. Wait until the coconut milk is boiling, then add the butternut. Let it simmer until the pumpkin is soft. Then add the meat back into the wok.
