Saoto soup is a comfort food dish with fragrant ingredients. It originates from Indonesia, but is also a popular and very commonly eaten dish in Suriname.
INGREDIENTS
- 1 bunch of bok choy
- 150g wok noodles
- 6 eggs
- 350g chicken breast, shredded
- Sunflower oil
- 1¾ liter water
- 360ml Faja Lobi Saoto Trafasie
- 360ml chicken broth with chicken meat
- 100g fried onion
- 3 bunches of fresh celery, chopped
- 3 piments
To serve along:
- Bok choy
- Wok noodles
- Hard-boiled eggs
- Chicken breast, shredded
- 180g bean sprouts
- 180g fried onion
- 180g mini fries chips
PREPARATION
STEP 1: Cut the bok choy with stems into bite-size. Then cook it, drain it, and put it aside.
STEP 2: Prepare the wok noodles according to the instructions on the package.
STEP 3: Hard-boil the eggs.
STEP 4: Cook the chicken until done, take it out of the pan. Heat 4 tablespoons of oil in a pan. Stir-fry the chicken until light-brown. Scoop it up, let it cool down, then shred it into long strips.
STEP 5: Bring water to a boil in a large pan. Add 360ml of Faja Lobi Saoto Trafasie, 360ml chicken broth with chicken meat, fried onion, chopped celery and the piments. Stir and cook it on high heat for 5 minutes. Stir the soup while cooking.
STEP 6: Turn down the heat, cover the pan with the lid and cook the soup for 20 more minutes.
Serving suggestion
Put an egg, bok choy, wok noodles, shredded chicken, bean sprouts, fried onions, and mini fries chips in a soup bowl and pour the soup over it. Add Surinamese sambal sauce if you like spicy food.
Variation tip
Saoto soup is also super tasty with wonton dumplings.
