素咖喱鸡 / Vegetarian Chicken Curry
Do you think that vegetarian means bland and boring? This recipe will prove you otherwise! Try this flavourful curry with vegetarian chicken (yes, it does exist!).

- 1 pack chicken curry paste (Happy)
- 1 pack vegetarian chicken (Happy)
- 10 boiled potatoes
- 60g green beans
- ½ carrot
- 1 onion
- 1 garlic clove
- 250 ml coconut milk
- 250-300 ml water
- 4-5 basil leaves
- Oil
Serve with:
- Rice
- Roti wraps
- Heat oil in a pan. Add the onion and stir until aromatic. Add the potatoes and carrot, and stir-fry for about 5 minutes.
- Add the garlic, then add the water. Boil the water for about 15 minutes over medium high heat.
- Add the vegetarian chicken, followed by the coconut milk. Then add the green beans with the paste. Stir well. Bring it to a boil again.
- Serve with rice and/or roti wraps.
