Humba is a Filipino dish that consists in sweet braised pork. Try this version with tofu instead of meat!
INGREDIENTS
- 125 ml Mama Sita’s Barbecue Marinade
- 1 tsp Mama Sita’s Oyster Sauce
- 200g plantain
- ½ kg fried tofu
- 2 Tbsp dried banana flower (bulaklak ng saging)
- 2 oregano leaves
- 2 bay leaves
- 3 garlic cloves, crushed
- 1 star anise
- 1 Tbsp brown sugar
- 1½ Tbsp cornstarch, dissolved in 2 Tbsp water
- 2 hard boiled eggs, peeled and halved
- 60 ml cooking oil
- 750 ml water
PREPARATION
Slice the plantain diagonally, about 6 mm thick. Fry the bananas in cooking oil. Set aside.
In a saucepan, mix water, barbecue marinade, oyster sauce, dried banana flower, oregano leaves, bay leaves, sugar, star anise, and tofu.
Bring it to a boil, then lower the heat to a simmer. Add dissolved cornstarch, stir and simmer until the sauce thickens. When almost done, add the boiled eggs.
Garnish with fried plantain.
