INGREDIENTS
400g glutinous rice
3 spring onions*
2 shallots*
3 cloves of garlic
2 tbsp dried shrimps (small)
10 Chinese mushrooms (dried)
3 Chinese sausages (lap cheong)*
Sauce
2 tbsp oyster sauce
4 tbsp Shaoxing rice wine
6 tsp light soy sauce
4 tsp dark soy sauce
4 tsp sugar*
2 tsp sesame oil
salt & pepper (to your own preference)

Preparation
Soak the glutinous rice in water overnight, then drain the water.
Place the glutinous rice on a deep plate. Steam for 45 minutes above a layer of boiling water in a steaming pan.
Soak the shrimps for 30 minutes and the mushrooms for 1 hour, in warm water and separate bowls. Slowly drain in a colander and wring to remove the moisture from the shrimps and mushrooms. Then remove the stems.
Cut the Chinese sausage, shrimps and mushrooms into tiny bits.
Heat the oil in a frying pan. Stir-fry on medium heat the shrimps and the sausage for several minutes. Then add the finely chopped shallots, garlic and mushrooms. Mix with the rest of the ingredients.
Lower the heat and add the glutinous rice. Mix the ingredients for the sauce in a bowl and add the mixture to the glutinous rice. Stir-fry until it is properly mixed and heated.
Season with salt and pepper. Add the spring onion and stir once more.
