Almond Cookies

These pretty flower-shaped almond biscuits are not only delicious, but also very easy to make! Serve them with a hot cup of tea and enjoy a sweet relaxing moment.

Information
  1. Put the sugar in a blender and mix it until it has become powder. Put it aside.
  2. Sift the cake flour, almond flour and baking soda in a bowl a couple of times.
  3. Separate the egg yolk from the egg white. Beat the egg yolk, add sugar and mix it well. Add oil and mix it well again. Add the flour with the almond powder in three separate steps. Mix well with a spatula until you no longer see any flour.
  4. Divide the dough into small portions of each 27-28 gram. Knead the dough until it’s a smooth ball.
  5. Option 1
    Place a piece of household foil over de wooden mold. Press the dough well against the molds. Remove the excess dough. Carefully pick up the foil and place the cookies on a baking tray. Preheat the oven at 175°C. Bake the cookies for 18 minutes.
  6. Option 2
    Oil the wooden mold, re-oil after 2 hours. Sprinkle some flour over the mold lightly. Press the dough into the mold and remove the excess dough. Flip over the mold and tap it, so the cookies fall onto the baking tray.
