Ayam bakar bumbu rujak is a popular Indonesian chicken dish. Rujak means “mixture” and many types of sauce are used to make it. This recipe calls for bumbu rujak, a sweet and spicy sauce in which a little bit of coconut milk is used to add a savory note to the dish.
INGREDIENTS:
- Bamboe Ayam Bakar Bumbu Rujak seasoning paste
- 500g chicken *
- 65 ml thick coconut milk
- 1-2 Tbsp sugar
- 3 Tbsp oil
- 150 ml water
PREPARATION
Heat 3 tablespoon of oil in a pan, stir-fry the seasoning paste for 1 minute. Add 500g cut chicken, stir-fry for 4 minutes. Pour in 65 ml of thick coconut milk and 150 ml of water, add 1-2 tablespoons of sugar. Cook over very low heat for 15-20 minutes.
For chicken: take out the chicken, and grill in the oven. When done, coat with remaining sauce.
*Variation tip:
You can replace chicken with beef.
