Choi sam is a Chinese vegetable with a crispy, juice texture. It’s very easy to prepare. You can either cook it or stir-fry it.

COOKED CHOI SAM
Ingredients:
- 750g choi sam
- 2 Tbsp oil
- 2 tsp salt
- 3 Tbsp oyster sauce
Directions:
Wash the choi sam and drain it. Remove the lowest part of the stem. Cut the vegetable into pieces of 15 cm. Bring water to a boil in a pan. Add the oil and salt to it, and cook the vegetable for 4 minutes or until the ends of the stems are no longer white, but translucent. Put the choi sam on a plate and sprinkle it with oyster sauce
STIR-FRIED CHOI SAM
Ingrediënten:
- 750g choi sam
- 2 Tbsp oil
- 2 garlic cloves
- 100ml vegetable stock
- 2 Tbsp Shaoxing rice wine
- 3 Tbsp oyster sauce
- 1 Tbsp potato starch
- 3 Tbsp water
Directions:
Wash the choi sam, drain it and chop it into pieces of 10 cm. Separate the stems from the leaves. Heat oil in a wok pan and fry the garlic without browning it. Add the choi sam stems, stir, then add the vegetable stock. Cook it for 2 minutes, then add the choi sam leaves and oyster sauce and stir.
Mix 1 tablespoon of potato starch and 3 tablespoons of water until it’s a creamy mixture. Add the mixture to the wok pan and stir until the sauce has thickened. If you like crispy vegetables, take the vegetables out earlier. If you like softer vegetables, you can stir-fry it a little longer.
This dish tastes great with jasmine rice.
