Kambing (mutton) dishes are traditionally served during Muslim festivals in Indonesia. Gulai kambing, or lamb curry, is a curry dish made with coconut and spices. The slow cooking makes the meat extremely tender, and the umami-rich sauce pairs perfectly with steamed white rice.

INGREDIENTS

  • Bamboe Gule seasoning paste
  • 500g mutton
  • 5 Tbsp concentrated coconut milk

Serve with:

  • Lemon juice
  • Chili sauce

PREPARATION
Boil 500g of cut mutton. Keep 480 ml of broth in the pan. Add the seasoning paste, turn to low heat and simmer until the meat is tender.

Add 5 tablespoons of concentrated coconut milk, simmer over low heat for 15 minutes.



Serve with a dash of lemon juice and chili sauce.
