INGREDIENTS
Tartare:
- 400g salmon fillets
- 500g mangoes
- 4 avocados
Marinade:
- 4 Tbsp olive oil
- Juice and zest of 2 lemons
- 3 Tbsp sesame seeds
- 1 clove of garlic
- ½ fresh chilli pepper
- Salt
- Pepper
Dressing:
- Chive twigs
Tools:
- Serving rings
PREPARATION
Dice the salmon fillets, avocados and mangoes, then place them separately in 3 different large bowls. Crush the garlic clove and finely chop the chilli pepper.
Marinade
Prepare the marinade by combining the olive oil, lemon juice, zest, garlic and chilli pepper in a bowl. Add salt and pepper to taste. Pour 2/3 of the marinade over the raw diced salmon and add the sesame seeds. Marinate for 30 minutes in the refrigerator.
Divide the rest of the marinade in half and pour it evenly over the diced avocados and mangoes. Drain the mangoes before doing so to prevent them from producing too much juice.
Dressing
Arrange the tartares on plates using serving rings. Start with the mango layer, then the avocado layer, and finish with the marinated salmon layer. Decorate with a few twigs of chives and serve immediately.
