Get a taste of Thailand with this authentic chicken satay! The peanut sauce will add flavour to the already delicious and juicy chicken skewers.
INGREDIENTS
- 2kg chicken fillet
Marinade:
- 3 shallots
- 5 garlic cloves
- 6 cm ginger
- 1 bunch of coriander
- Juice of 2 limes
- 1 red pepper
- 1 Tbsp cumin
- 1 Tbsp turmeric
- 2 Tbsp light soy sauce
- 2 Tbsp oil
- 2 Tbsp sugar
- 1,5 tsp salt
- 400ml coconut milk
Peanut sauce:
- 400g Ratu Culinair peanut mix
- 200ml coconut milk
- 100ml water
Tools:
- 40 bamboo skewers
PREPARATION
Cut the chicken fillet in cubes of 2 cm and put it in a bowl. Mince the garlix and ginger and cut the shallots and coriander in coarse pieces.
Marinate the chicken with fresh herbs and spices. Mix everything well, cover the bowl with plastic foil and put it in the refrigerator for at least 6 hours.
Thread the marinated chicken onto the skewers. Grill the chicken satay for 10 minutes on each side.
Prepare the peanut sauce in the meantime: boil the coconut milk in a saucepan. Add the peanut mix. Stir well until it has become a smooth sauce. Add the water and stir again.
Serve the Thai chicken satay with the peanut sauce.
