Beef caldereta is a hearty Filipino stew with beef, potatoes, carrots and bell peppers in spicy tomato sauce. It is commonly served on holidays and special occasions… but nothing is stopping you from enjoying this savory dish during the rest of the year, right? The slow cooking makes the beef tender and delicious!
INGREDIENTS
- 50g Mama Sita’s Caldereta Mix
- 1 kg beef brisket
- 125g potatoes
- 125g carrots
- 1 red bell pepper
- 125g frozen green peas
- 60g green olives, pitted (optional)
- 1 liter water
- 2 Tbsp cooking oil
PREPARATION
Dice the potatoes and carrot. Cut the bell pepper into 4-cm triangles. Cut the beef brisket into 2.5-cm cubes.
In a saucepan, pan-fry the beef brisket in cooking oil until the edges turn brown. Add water and bring to a boil, lower the heat and simmer until tender. Add water if necessary. When the meat is tender, add potatoes and carrots. Simmer until cooked. Add the caldereta mix. Stir and let it boil. Add red bell pepper, green peas and green olives. Cook for 3 minutes.
