Bo Bun: Rice Vermicelli with Sautéed Beef
Bò bún is a tasty dish that originates from southern Vietnam. It consists of cold rice vermicelli garnished with raw vegetables, various aromatic herbs and strips of sautéed beef, cooked just before serving. This refreshing, complete and healthy dish makes a perfect alternative to noodle soup in summertime.

Based on 6 persons
Garnish:
- 60cl homemade nuoc cham sauce
- 1kg rice vermicelli
- 1 bunch of Thai basil
- 1 green salad
- 1 cucumber
- 3 carrots
- 300g bean sprouts
- 1 bunch of mint
- 1 bunch of coriander
- 100g peanuts
Sautéed beef:
- 1kg beef
- 1 large onion
- 2 Tbsp sunflower oil
- 1 Tbsp soy sauce
- 2 Tbsp nuoc mam fish sauce
- 2 pinches of pepper

Preparation time: 40 minutes

Cook the vermicelli in boiling water for 7 to 9 minutes. Drain them and rinse them with cold water. Wash the herbs and vegetables. Grate the carrots and remove the herbs from the stems. Cut the salad into strips. Crush the peanuts in a blender. Cut the cucumber into small cubes. - Arranging the ingredients
Divide the rice vermicelli over different bowls. Garnish each bowl with vegetables, herbs and peanuts. Arrange the ingredients in an aesthetic way. - Sautéed beef
Just before serving, thinly slice the beef and onion. Heat the oil in a wok, then sauté the onion and meat. Add the soy sauce, nuoc mam and pepper. Let the meat cook over high heat for 5 minutes while stirring. When it is done, divide the sautéed beef and the nuoc cham in each bowl before serving.
