Century eggs are Chinese delicacies obtained by steeping duck eggs in a lime-rich mud mixture for several weeks. The egg yolk turns dark green with a creamy texture and a strong smell of sulfur and ammonia. The egg white turns dark brown and translucent like jelly, but with little flavor. Will you dare to taste this very peculiar specialty?

INGREDIENTS

  • 1 pack silken tofu
  • 2 century eggs (pei daan)
  • 20g vegetarian meat floss
  • 10g fish floss
  • 1 red pepper
  • 1 spring onion
  • 2 cilantro bunches

Sauce mix:

  • 2 Tbsp vegetarian oyster sauce
  • 1 Tbsp sweet soy sauce
  • 1 Tbsp water
  • 1 Tbsp sesame oil

PREPARATION
Mix the ingredients for the sauce mix in a bowl. Cut the century eggs and cilantro into coarse chunks, cut the red pepper into fine slices, and slice the spring onions into thin rings.

Cut the tofu into blocks and put it on a plate. Put the eggs on top of the tofu, followed by the spring onions, cilantro and red pepper. Pour the sauce on top and top off with the vegetarian meat floss and fish floss.
