Chicken Afritada: Filipino Chicken Tomato Stew
A simple Filipino stew with chicken, potatoes and bell peppers in tomato sauce.

Based on 2-4 persons
- 30g Mama Sita’s Menudo/Afritada Mix
- 500g chicken
- 3 potatoes, fried
- 1 red bell pepper
- 1 green bell pepper
- 125g frozen green peas (optional)
- 2 Tbsp oil
- Cube the bell peppers. Cut the potatoes into cubes of 2½ cm. Cut the chicken into serving pieces.
- Dissolve the menudo/afritada mix in 250 ml water. Heat oil in a pan and fry the chicken until golden brown.
- Pour in the dissolved menudo/afritada mix and cover. Bring it to a boil and simmer until the chicken is done, add water if necessary.
- Add the fried potatoes, bell peppers and green peas. Simmer for 2 minutes.
