Dalgona coffee was popularized on social media during the COVID-19 pandemic, when confined people started filming themselves making whipped coffee by hand at home. The name refers to dalgona, a Korean candy, due to the resemblance in taste and appearance. However, most dalgona coffee does not actually contain dalgona.

INGREDIENTS

  • 4 Tbsp instant coffee
  • 4 Tbsp sugar
  • 4 Tbsp warm water
  • Tapioca pearls
  • Milk

Tapioca pearls:

  • 1.6 liter water
  • 100g tapioca pearls

Sugar water:

  • 3 Tbsp brown sugar
  • 250 ml water

PREPARATION


Tapioca pearls


Bring 1.6 liter water to a boil. Add the tapioca pearls and bring it to a boil again. Place the lid on the pan. Boil the pearls for about 30 minutes over medium high heat, stir occasionally. Turn off the heat and let it rest for 30 minutes with the lid on the pan.



Then add 500 ml of water and bring it to a boil again. Boil for about 30 minutes over medium high heat. Turn off the heat after 30 minutes. Then let the pearls rest in the warm water for another 30 minutes, with the lid on the pan.



Drain the water and rinse the pearls with cold water.



Mix the brown sugar and hot water in a bowl. Add the sugar water to the tapioca pearls. Stir well.



Dalgona coffee


Put the sugar, instant coffee and water in a mixing bowl. Beat the coffee mixture with a hand mixer for about 5 minutes until stiff. Put the tapioca pearls in a glass and add the milk. Put the creamy coffee mixture on top.
