This colourful dessert drink with surprising texture is essential to experience the ultimate South Asian summer. Although this dessert drink is said to originate as far and early as 16th century Persia, nowadays it is drunk all over the Indian subcontinent, from Sri Lanka to Pakistan! Discover now why this dessert is so wildly popular across South Asia!



INGREDIENTS

  • 360ml milk
  • 2 tbsp rose syrup 
  • 4 tsp basil seeds 
  • 1-2 tbsp assorted jelly
  • 2 scoops of banana, coconut or vanilla ice cream 

Garnish:

  • Few pistachios (chopped)
  • Few edible rose petals

PREPARATION
Soak the basil seeds 30 minutes until the seed is covered in a cell-like structure. Drain the seeds.



Step 1
Mix rose syrup and milk. Stir until it becomes an equal mixture. Add more rose syrup if you prefer a sweeter version. Pour the mixture into the glasses and fill about halfway.



Step 2
Divide the soaked basil seeds over the glasses.


Step 3
Drain some assorted jelly, the amount to your preference. This to prevent the syrup from mixing in with the flavours. Add the drained jelly to the glasses. Do you like it sweet? You can add as much jelly as you like!



Step 4
Add one scoop of ice cream per glass.

Step 5
Garnish with edible rose petals and chopped pistachios to your preference.
