  • 200g Bom Mie Asli
  • 6 Tbsp stir-fry noodle sauce
  • 100g bean sprouts
  • 2 spring onions
  • ¼ carrot
  • 1 small onion
  • 1 red pepper
  • 2 garlic cloves
  • 1 cm thick ginger
  • ½ tsp sugar
  • White pepper
  • 2 eggs

Marinade:

  • 100g chicken thighs
  • 1½ Tbsp light soy sauce
  • 3 tsp pure sesame oil
  • ¼ white pepper

Information
  1. Slice the carrot, onions and ginger into thin strips. Chop the garlic into fine bits. Slice the green part of the spring onions into fine rings, and the white part into rough chunks. Slice the red peppers into fine rings and whisk the eggs.
  2. Slice the chicken into thin strips. Mix the light soy sauce, sesame oil and white pepper in a bowl, then add the chicken. Stir well and marinade for 30 minutes in the fridge.
  3. Bring a pan with water to a boil. When the water is boiling, add the noodles. Disentangle the noodles and take them out of the pan after one minute. Drain the noodles.
  4. Heat oil in a pan. Add the chicken and stir-fry until done. Scoop it up and put it aside. Then add the onions, garlic and half of the peppers to the pan, and stir well to release the flavours. Add the noodles and stir-fry for a minute. Then add the noodle sauce and stir well.
  5. Push the noodles to one side. Pour a dash of oil in the pan and add the eggs. Let the eggs solidify a bit, then mix it with the noodles. Add the bean sprouts, spring onions, carrot, the rest of the peppers and the chicken. Stir well again. Season with sugar and white pepper.
